I’m a self-professed sugar cookie connoisseur. I’ll take ’em frosted, cut-out, rolled in sugar, soft, chewy, crispy, or straight out of the plastic container from the bakery section at Walmart.

What I’m saying is that I’m fairly obsessed with sugar cookies and I’m honestly not very picky about them.

Wait, maybe that makes me less of a connoisseur and more of a human sugar cookie garbage disposal. Whatevs.

While I do appreciate a beautiful sugar cookie complete with royal icing, I’m more of a buttercream type of girl. And I’m impatient. It’s why I love no-chill sugar cookies when I do want to make cut-outs.

And I’m definitely not fancy, so these easy sugar cookies are totally my thing. They come together in less than 10 minutes with everyday ingredients that I’m betting you have in your fridge and pantry right now.

I first made this chocolate guinness cake years and years ago for my younger brother, Jared.

Even though I’m not a big fan of alcohol, I often find myself buying various libations that pique my interest for use in recipes. One of those random purchases somewhere along the line included a couple bottles of stout beer that I just knew would lend itself quite well to a chocolatey cake.

And so, thanks to a bit of impulse shopping and my little brother, this chocolate Guinness cake was born.

It doesn’t matter what time of year it is, I’m probably thinking about cookies.

Even in the middle of pumpkin and apple season. I mean, I always love my iced pumpkin cookies or my apple peanut butter cookies, but there’s also never a wrong time to enjoy a soft and chewy white chocolate pistachio pudding cookie.

Make them for any holiday that revolves around the color green. Make them in the summer. Make them in the fall.

I don’t really get too much into St. Patrick’s Day except for where the food is concerned. 

When it comes to the food, I will happily bake up a loaf of Irish soda bread or a Baileys cheesecake. And I know plenty of people who will whip up an Irish lamb stew, although my family prefers Guinness stew.

I mean, who wouldn’t want to take part in those, whether you’re Irish or not?

But when you have kids, you get asked to make all kinds of seasonal stuff. So it’s always good to have some “green treats” ready to go.

These St. Patrick’s Day crinkle cookies are easy to make and are super delicious, thanks to one of my favorite baking ingredients.

I don’t know if it’s the exhaustion of the last couple of years catching up with me or what, but these days I am all about desserts that impress but were super easy to throw together.

I still love baking for people and love taking desserts when we visit family and friends, but I’m definitely in a “the easier the better” phase of life.

Thankfully, I’ve got this Layered Pistachio Pudding Dessert recipe in my back pocket. It’s one of those desserts that people always love and always ask for the recipe, but it’s so easy that I can throw it together in about 45 minutes.

St. Patrick’s Day is one of those strange holidays that always sneaks up on me.

Even though I’ve been blogging for well over a decade at this point, I still get to the beginning of March before I remember that readers are going to be looking for St. Patrick’s Day recipes.

Once I finally remember that it’s around the corner, I usually try to put something together for you guys. Some years it’s savory recipes like Irish Soda Bread, while other years it’s desserts using Irish cream, such as Baileys Cheesecake.

This year, I decided to lean into the green theme with this super easy pistachio bundt cake.

Growing up, salads that weren’t really salads were a staple at my Nana’s house. From Ambrosia Salad to Strawberry Pretzel Salad – these were the salads that I looked forward to at family gatherings, and Watergate Salad was no exception.

Nana and her friends always had their go-to recipes that they were famous for and could whip them up in no time flat for a church function, ailing friend, or family get-together. 

Nana was known for her cheesecake – usually cherry cheesecake, but switched up with other pie fillings depending on the season. Strawberries during spring, and lemon during the summer months.

Nana’s friend, Anita, always made an amazingly fluffy pistachio “salad” known as Watergate Salad. We come from a family that loves anything with pistachio pudding, from pudding pie to Pistachio Pudding Parfaits, so naturally, I was obsessed with the stuff as a kid.

Last week I decided that I don’t make nearly enough cupcakes these days.

Back in the early days of my blog, I feel like I made every flavor combination possible and if you ever flip through cupcake archives here on My Baking Addiction, you’ll see that I am sooo not kidding.

I’m a big fan of pudding but rarely make it myself, so I’m definitely guilty of spooning down Jell-o chocolate pudding snack packs from time to time – even adding a little squirt of whipped cream, too!

I was craving chocolate something fierce recently and decided to make homemade pudding with a little bit of Baileys Irish Cream just to make it extra special. Because, hey! Weekends!

Although I have made homemade pudding in the past, I forgot how easy it is to make. Not only is making homemade pudding incredibly simple, it also tastes amazing and it’s a great framework for all types of flavor combinations.

Plus, you’ll get a mini workout from all the whisking, so you can feel a little less guilty about eating this decadent treat!

I have never understood the need to don myself in head to toe green gear and head into jam-packed bars to simply rub up against sweaty, intoxicated people and drink enough green beer that my tongue takes on a disgusting shade of chartreuse.

Although I am not an avid fan of this holiday or the spirits that accompany it, I do love all things Irish food.
Out of respect for those many devoted fans, most of whom aren’t remotely Irish by the way, I thought I would join in the festivities by creating a fantastic meal to help them soak up all of that green beer.

I mean, I am officially 1/19 Irish, so I needed to do something, right? And, what better pair with St. Patrick’s Day than a hearty Guinness Stew?
