We love one-pot dinners around here. There’s nothing better than minimal cleanup and having a meal that my family will happily gobble up.

One-pot spaghetti and one-pot beef stroganoff are big hits around here. I wanted to add to my list of one-pot dinners with something around chicken and orzo (one of my favorite little pasta shapes) and this one-pot lemon chicken and orzo was born.

Between the chicken, the orzo, and the spinach and tomatoes, this is truly a full meal in one pan. Talk about a weeknight dinner win!

I am a big fan of easy dinner recipes.

With two young kids, I need all the help I can get when it comes to getting dinner on the table. And often that help is my slow cooker.

From crockpot taco soup and crockpot mississippi pot roast to easy crockpot pulled pork, I love being able to “set it and forget it” until it’s time to eat. 

Spaghetti is always a hit around here, so this crockpot spaghetti sauce is my new favorite weeknight dinner recipe. Sometimes I will even make a double batch so we can eat some right away and freeze the rest for later.

It’s back to school week. Anyone who has school-age kids knows that means this week is going to be nuts.

Getting back into the school routine is always hard on everyone. So I know that I need to have some easy meals lined up to get through the week.

Summer is pasta salad season. I hope I’m not the first one to tell you!

I love whipping up a simple but delicious pasta salad to take to a summer cookout, to have for a light dinner, or to eat for lunch throughout the week. My Italian pasta salad and Greek pasta salad are always big hits when the weather warms up.

This year I decided I needed to add a couple more pasta salad recipes to my lineup. Up first is this bacon ranch pasta salad. It’s got a creamy, herby ranch dressing to go with some tomatoes, roasted red pepper, green onion, cheese, and – of course – salty bacon.

It’s a cinch to make and is bound to become a summer favorite for your family, too!

I love pasta dishes. I especially love pasta dishes that can be made on a weeknight but are fancy enough to serve at a dinner party or make for a date-night in.

Easy fettuccine alfredo, creamy pesto pasta with shrimp, and goat cheese pasta are all delicious and impressive but easy to make.

This pasta carbonara is another recipe to add to that list. 

There are a lot of ways to make pasta carbonara, some of which make Italians cringe and some of which are much more traditional. 

Even though I don’t always care about sticking to traditional ingredients or methods for a lot of recipes, I try to stick as closely as I can to tradition when making carbonara, just because I think it’s so delicious!

I don’t know if I’ve mentioned this before, but we got a Blackstone griddle for Christmas from my dad and stepmom. If you happen to ever find yourself on the food side of TikTok, you know the hype.

I mean, come on, hibachi at home? Breakfast for 10 people made all at one time? Yes, please. I promise you, the hype is real.

We absolutely love our Blackstone. So much so that we gave our new-ish gas grill to my mom because we just weren’t using it enough to justify the space it was taking up.

Only we haven’t been able to use the Blackstone much in recent weeks because it’s done nothing but rain here in Ohio. So it was back inside the kitchen to cook easy summer dinners like this One-Pot Spaghetti.
