When it comes to the holidays, the last thing I want to do is be fussing around in the kitchen. 

Don’t get me wrong, I love a good meal. But give me quick and easy dishes so I can spend time with my family, not focused on the oven.

That’s why I absolutely love no bake cheesecakes. Yes, I love all my cheesecake recipes, but with no-bake cheesecake you get the luscious, creamy flavors you expect with a fraction of the time.

No bake cheesecakes are just as customizable as regular ones too, so you can make no-bake peach cheesecake in the summer and this creamy pumpkin spice cheesecake in the fall and winter.

This no bake pumpkin cheesecake is a little different from my classic no-bake cheesecake because pumpkin puree is folded into the batter in place of some of the cream cheese. 

We also amp up the flavor with classic pumpkin pie spice and a Biscoff cookie crust. Honestly, I might like this dessert even better than baked pumpkin pie!

Plus, because these cheesecakes are made in individual servings, they’re great for serving at parties or part of a dessert spread.

It’s super easy to throw together, requires simple ingredients, and is perfect if you make it the night before you plan on serving.

Have you ever gotten peaches from The Peach Truck? We’re big peach fans in this household and we’ve never had better peaches than the ones we’ve purchased from them. Only this year, they didn’t come to our town, so we opted for home delivery.

Having peaches delivered to your doorstep might seem a bit over-the-top considering you can walk into any grocery store and grab them, but I promise you, these peaches are different. Maybe you’ve noticed by now…I have a little obsession with cheesecake recipes.

I saw a meme earlier this week about a midwest fall dress schedule and it was as follows:

And let me just tell you, if you live in Ohio during the month of September this is 100% accurate. I mean, let’s be real – this still happens in October.

Two days ago I was out on a morning walk wearing a coat and gloves and by 1pm it was 75 degrees.

Basically I’m trying to tell you that while I’m all bring on all the fall baked goods, I’m also kind of sweaty by 1pm and looking to indulge in simple, delicious no-bake desserts.

Trust me though on those cool mornings, I’ll be whipping up pumpkin everything.

Are you guys loving no-bake desserts as much as I am right now?

Basically, if it’s not no-bake, or a s’more, I’m not making it right because it’s freaking hot and I’m basically doing whatever I can to not turn on my oven.

In fact, I’ve been using our Breville Smart Oven more than ever because it doesn’t heat up my kitchen like our regular oven does. If you’re looking into a countertop oven, I can’t recommend the Breville enough! It’s pricy, but totally worth the investment. And it make a perfect slice of toast, just in case you’re a toast kind of person.

Okay, countertop appliances aside, let’s talk no-bake cheesecake.
