If you’ve been following MBA for a while, you know that I’m a big fan of my homemade bisquick mix. It’s one of my favorite homemade kitchen staples – maybe only surpassed by my pumpkin pie spice. 

I love using my homemade bisquick in everything from 7UP biscuits to impossible coconut pie. And of course bisquick pancakes are on the weekend breakfast menu all the time around here.

You also probably know how much I love my hash brown breakfast casserole. So when I realized I could use my homemade bisquick to make another super easy and delicious breakfast casserole, I was on it immediately.

One of my very favorite things about Christmas morning is Christmas breakfast. After opening gifts, we stay in our matching pajamas and eat a simple yet filling breakfast full of all of our favorites. Pancakes and sausage for Elle, eggs and bacon for Eric and some type of make-ahead casserole for me.

No one really wants to be worrying about breakfast during the Christmas morning gift flurry, so recipes like overnight french toast casserole really save the day.

I love some pecan sticky buns, but what I really go for with a hectic day ahead are savory breakfasts. 

Both my croissant breakfast casserole and make-ahead breakfast casserole are so filling and satisfying. And Mexican breakfast casserole is always a favorite. I just had to make a version with hash browns!

Holiday mornings are something else, aren’t they?

I find that whether we have family staying with us or it’s just Eric, Elle and me, everyone wakes up starving and anxious to watch the parade (if it’s Thanksgiving) or open presents or just hang out. And somehow they all come to me wondering what’s for breakfast.

That’s when I turn to recipes I can prep the night before and bake off in the morning. I want something so easy to cook that I don’t even have to have had my coffee yet to be able to pop it in the oven.

I was first introduced to this Hash Brown Casserole by my stepmom almost 20 years ago and I immediately fell in love with the recipe.

I mean. What’s not to love about potatoes, cheese, sour cream and a delicious crispy, buttery topping? Basically, this casserole is a carb lover’s dream come true.

I pretty much make them for every single holiday. Not only are these potatoes super easy to make, people go crazy for them. I’ve even seen people forego the more traditional mashed potatoes or sweet potato casserole for them.

Let’s be real though, I love carbs, so I just eat all three.

Why is breakfast such a hassle during the school year? 

On the weekend, I love making everything from Banana Pancakes and Glazed Donut Muffins to Cinnamon Coffee Cake.
