As a parent, I’ve come to appreciate recipes that don’t require a mixer, just a couple of bowls and a spoon or spatula.

They’re even easier for my kids to help me make, and Elle is old enough that she can make recipes like that all by herself now.

Blondies are a great no-mixer recipe. They come together in just a few minutes and are always a hit with their slightly underbaked centers. 

These white chocolate pecan blondies are an easy favorite and a great way to use up any white chocolate chips you may have lying around. Cut them into giant bars and top them with a scoop of ice cream for a decadent dessert or cut them into smaller pieces for a quick afternoon snack.

Do you ever see a post on social media, scroll past without saving it, and then keep thinking about it without being able to find it later?

That’s what happened with these apple cider blondies. I originally saw them on social media, probably TikTok, but kept on scrolling and didn’t think much about it at the time.

After coming home with way too much cider from a local orchard, I remembered the post. Of course, then I couldn’t find it and had to google a recipe instead.

I landed on a recipe from The Kitchn, which I ended up tweaking until my family felt they were juuust right.

I’ve already made these apple cider blondies several times and they are possibly Elle’s new favorite fall dessert. And based on the feedback from my other taste testers, I bet you’ll end up feeling the same.

I am really on a big brown butter kick right now.

Even though it might not be a “traditional” fall ingredient like pumpkin or maple, it goes really well with both of those things. Just give my brown butter rice krispie treats or brown butter pumpkin bread a try and see what I mean.

But brown butter is so good, it really stands on its own, too, making it a great flavor base for cookies (such as brown butter chocolate chip cookies) and these brown butter blondies.

These blondies are chewy, a little bit nutty from the brown butter, have a rich sweetness from the brown sugar, and are easy to adapt using your favorite mix-ins!

Oh, and you can make them, start to finish, in under an hour. What a win.

I used to count down the days until I could buy the Starbucks Cranberry Bliss Bar. But now I have my own recipe, and honestly, it’s even better!

Cranberry is such a wonderful flavor that deserves more attention all year long. I’m not complaining about it getting its due in winter, though.

The flavors in these cranberry bars are similar to another copycat recipe of mine, glazed orange scones, as well as my cranberry orange bread and cranberry orange cinnamon rolls.

What can I say, I love the combo of cranberry and orange!

We’ve been blessed with really great weather here in Ohio for the past couple of weeks, which has been an awesome start to summer break and enabled us to hang out at the pool almost every day.

However, in recent days we’ve been seeing a ton of rain which has kept us indoors watching funny YouTube videos, crafting and of course – baking up some delicious treats like these sweet and salty Salted Caramel Blondies with yummy bites of pretzels!

I’m getting pumpkin hate mail.

Yes, you read that correctly. Not like real hate mail (well, I get some of that too,) but emails specifically targeting the “excessive amount of pumpkin recipes” that I’ve posted in the past few weeks.

Sure, I’ve already posted pumpkin creme brulee, pumpkin cookies, pumpkin chocolate chip bread and now these pumpkin blondies, but guys, it’s fall and pumpkin is what I do.

And I’m not one bit sorry about it.

However, if you’re a pumpkin hater as well, I’m just here to tell you that I have plenty of non-pumpkin recipes coming your way in the coming months, so hang tight!

Today I want to chat about dining out at fancy-schmancy restaurants. Ya see, Eric and I don’t really venture into the high-end dining scene much anymore.

Mainly because he knows the way to my heart is a chicken salad from Chipotle with extra guac, or a burger bowl from Five Guys with double bacon. I’m pretty simple to please, ya’ll.

However, this past weekend, we got dressed up and went to one of our favorite spots in the Cleveland area. The restaurant is perched on a cliff that overlooks Lake Erie, so it offers one of the best views in the city.

Plus, it has one of Eric’s favorite menu items in all of Cleveland – Braised Beef Short Rib Pierogies. And yes, they are every bit as delicious as they sound.
